The wavelength is just right, so the heat actually sinks into the food instead of just bouncing off the surface.&#xA;To make this work in a rotary oven, we don&amp;rsquo;t just throw the lamps in there. We stagger them in a radial pattern. As the drum spins, the food slides through these overlapping zones of heat. It kills the shadows.
